๐Ÿ”ช Instructions:

  1. Prepare chicken:
    Season cutlets with salt and pepper. Lightly dredge in flour, shaking off the excess.

  2. Cook chicken:
    Heat oil and 1 tablespoon butter in a skillet over medium heat. Cook chicken for 3โ€“4 minutes per side until golden and cooked through. Set aside and keep warm.

  3. Sautรฉ vegetables:
    In the same pan, add the remaining butter, onions/shallots, and mushrooms. Cook 5โ€“6 minutes until soft and browned. Add garlic and cook 1 minute more.

  4. Deglaze & make sauce:
    Pour in white wine and scrape up the brown bits. Let it simmer 1โ€“2 minutes, then add broth and lemon juice. Simmer 3โ€“4 minutes to slightly thicken. Stir in cream if using.

  5. Return chicken to pan:
    Place chicken back in the sauce to heat through. Spoon mushrooms and sauce over top.

  6. Garnish & serve:
    Sprinkle with fresh parsley or thyme. Serve with pasta, rice, or mashed potatoes.
