Instructions:

  1. Preheat the Oven:
    Preheat the oven to 325°F (160°C). Place the ham on a rack in a roasting pan, cut side down, and cover loosely with aluminum foil.
  2. Make the Glaze:
    In a saucepan, combine brown sugar, honey, Dijon mustard, apple cider vinegar, cayenne pepper (if using), cinnamon, and cloves. Heat over medium heat until the sugar dissolves and the mixture is smooth. Simmer for 2-3 minutes and set aside.
  3. Score the Ham:
    Using a sharp knife, score the ham’s surface in a crisscross pattern with shallow cuts (about 1 inch apart). This allows the glaze to seep into the meat.
  4. Apply the Glaze:
    Brush half of the glaze over the ham, making sure it gets into the cuts. Cover the ham with foil again.
  5. Bake the Ham:
    Bake the ham for 2-2.5 hours, basting with the remaining glaze every 30 minutes. The ham should reach an internal temperature of 140°F (60°C).
  6. Caramelize the Glaze:
    Remove the foil in the last 20-30 minutes of baking to let the glaze caramelize. Keep an eye on it to prevent burning.
  7. Rest and Serve:
    Let the ham rest for 15-20 minutes after removing it from the oven. Slice and serve with extra glaze if desired.
