MINI PEACH COBBLER RECIPE

Equipment Needed

  • Mixing bowls
  • Muffin tin (12-cup capacity)
  • Small saucepan
  • Whisk or wooden spoon
  • Cooking spray or butter for greasing

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 12-cup muffin tin with cooking spray or butter to ensure easy removal of the cobblers.

Step 2: Prepare the Peach Filling

  1. In a medium saucepan over medium heat, combine the diced peaches, sugar, vanilla extract, cinnamon, nutmeg, and lemon juice.
  2. Cook for 5-7 minutes, stirring occasionally, until the peaches release their juices.
  3. In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry.
  4. Stir the cornstarch mixture into the peach filling and cook for another 2-3 minutes, or until the mixture thickens slightly.
  5. Remove from heat and let the filling cool slightly.

Step 3: Make the Batter

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. Add the milk and melted butter to the dry ingredients and stir until just combined. Avoid overmixing to maintain a tender texture.

Step 4: Assemble the Mini Cobblers

  1. Spoon about 1 tablespoon of the batter into the bottom of each muffin cup.
  2. Add 2-3 tablespoons of the peach filling on top of the batter in each cup.
  3. Finish with another small dollop of batter on top of the peach filling. It’s okay if the batter doesn’t fully cover the peaches; it will spread as it bakes.

Step 5: Bake the Cobblers

  1. Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the cobblers are golden brown and bubbly.
  2. Remove from the oven and let cool in the pan for 5-10 minutes.

Step 6: Serve and Enjoy

  1. Use a butter knife to carefully loosen the edges of each cobbler before lifting them out of the tin.
  2. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
