Equipment Needed

- Muffin tin (12-cup capacity)
- Small saucepan
- Whisk or wooden spoon
- Cooking spray or butter for greasing
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 375°F (190°C).
- Grease a 12-cup muffin tin with cooking spray or butter to ensure easy removal of the cobblers.
Step 2: Prepare the Peach Filling
- In a medium saucepan over medium heat, combine the diced peaches, sugar, vanilla extract, cinnamon, nutmeg, and lemon juice.
- Cook for 5-7 minutes, stirring occasionally, until the peaches release their juices.
- In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry.
- Stir the cornstarch mixture into the peach filling and cook for another 2-3 minutes, or until the mixture thickens slightly.
- Remove from heat and let the filling cool slightly.
Step 3: Make the Batter
- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the milk and melted butter to the dry ingredients and stir until just combined. Avoid overmixing to maintain a tender texture.
Step 4: Assemble the Mini Cobblers
- Spoon about 1 tablespoon of the batter into the bottom of each muffin cup.
- Add 2-3 tablespoons of the peach filling on top of the batter in each cup.
- Finish with another small dollop of batter on top of the peach filling. It’s okay if the batter doesn’t fully cover the peaches; it will spread as it bakes.
Step 5: Bake the Cobblers
- Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the cobblers are golden brown and bubbly.
- Remove from the oven and let cool in the pan for 5-10 minutes.
Step 6: Serve and Enjoy
- Use a butter knife to carefully loosen the edges of each cobbler before lifting them out of the tin.
- Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
