5. Add Seasonings and Liquid
- Stir in your spices (cumin, chili powder, paprika, oregano) and mix well.
- Add diced tomatoes and broth, scraping the bottom of the pot to deglaze.
6. Combine and Simmer
- Return the cooked protein to the pot along with beans and corn.
- Bring the mixture to a boil, then reduce heat to low and cover.
- Let it simmer for 18-20 minutes (or longer for brown rice), stirring occasionally to prevent sticking.
7. Add Cheese
- Once the rice is tender and the liquid absorbed, sprinkle cheese over the top.
- Cover the pot and let the cheese melt, about 5 minutes.
8. Garnish and Serve
- Garnish with fresh cilantro, green onions, or a squeeze of lime juice.
- Serve straight from the pot with tortilla chips, sour cream, or avocado slices.
