Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 400°F (200°C).
  2. Line a large sheet pan with parchment paper or lightly grease it with cooking spray to prevent sticking.

Step 2: Season the Potatoes

  1. In a mixing bowl, combine the halved potatoes, olive oil, rosemary, garlic powder, salt, and black pepper.
  2. Toss well to coat the potatoes evenly with the seasoning.
  3. Spread the potatoes in a single layer on one side of the sheet pan.

Step 3: Prepare the Pork Chops

  1. Pat the pork chops dry with paper towels to ensure even browning.
  2. In another mixing bowl, mix olive oil, garlic powder, smoked paprika, thyme, salt, and black pepper to create a seasoning rub.
  3. Rub the seasoning mixture evenly over both sides of the pork chops.
  4. Place the pork chops on the sheet pan next to the potatoes, leaving some space between them.

Step 4: Bake the Dish

  1. Place the sheet pan in the preheated oven and bake for 25-30 minutes, or until the internal temperature of the pork chops reaches 145°F (63°C) when measured with a meat thermometer.
  2. Stir the potatoes halfway through baking to ensure even cooking and browning.

Step 5: Broil for Crispiness (Optional)

  1. If desired, switch the oven to the broil setting and broil for 2-3 minutes to crisp up the pork chops and potatoes.
  2. Keep a close eye on the food during broiling to prevent burning.

Step 6: Garnish and Serve

  1. Remove the sheet pan from the oven and let the pork chops rest for 3-5 minutes.
  2. Garnish with freshly chopped parsley and serve with lemon wedges on the side for a burst of freshness.

Serving Suggestions

  • Vegetables: Pair this dish with a side of roasted asparagus, steamed green beans, or a fresh garden salad.
  • Sauces: Drizzle with a tangy mustard sauce or serve with a dollop of sour cream for the potatoes.
  • Bread: Add a side of crusty bread or dinner rolls to soak up the juices.

Tips for Success

  1. Choose the Right Pork Chops: Opt for pork chops that are at least 1 inch thick to prevent overcooking and dryness.
  2. Uniform Potato Sizes: Cut the potatoes into similar sizes to ensure even cooking.
  3. Room Temperature Meat: Allow the pork chops to come to room temperature for 15-20 minutes before cooking to promote even cooking.
  4. Use a Meat Thermometer: Always check the internal temperature of the pork chops to avoid undercooking or overcooking.
  5. Don’t Overcrowd: Leave space between the pork chops and potatoes on the sheet pan for proper air circulation and browning.
