Instructions

Step 1: Prepare the Ribs

  1. Rinse the beef ribs under cold water and pat them dry with paper towels.
  2. Remove the silver skin (a thin, tough membrane) from the back of the ribs if it hasn’t already been removed. This step helps the seasoning penetrate the meat.
  3. In a small bowl, mix the salt, black pepper, smoked paprika, garlic powder, and onion powder.
  4. Rub the spice mixture all over the ribs, ensuring they are evenly coated.

Step 2: Optional Searing (Adds Extra Flavor)

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Sear the ribs for 2-3 minutes on each side until browned. This step enhances the flavor but can be skipped if you’re short on time.

Step 3: Prepare the Barbecue Sauce Mixture

  1. In a medium bowl, whisk together the barbecue sauce, apple cider vinegar, beef broth, brown sugar, Worcestershire sauce, Dijon mustard, and liquid smoke (if using).

Step 4: Slow Cook the Ribs

  1. Place the ribs in the slow cooker, arranging them in a single layer if possible.
  2. Pour the barbecue sauce mixture over the ribs, ensuring they are fully coated.
  3. Cover the slow cooker with the lid and set it to low for 6-8 hours or high for 4-5 hours. The ribs are done when the meat is tender and easily pulls away from the bone.

Step 5: Optional Broiling (For a Sticky Glaze)

  1. Preheat your oven to broil and line a baking sheet with aluminum foil.
  2. Carefully transfer the cooked ribs to the prepared baking sheet using tongs.
  3. Brush additional barbecue sauce over the ribs.
  4. Broil the ribs for 3-5 minutes, or until the sauce becomes caramelized and sticky. Watch closely to prevent burning.

Step 6: Serve and Enjoy

  1. Transfer the ribs to a serving platter and drizzle with any remaining sauce from the slow cooker.
  2. Serve hot with your favorite sides.

Serving Suggestions

  • Sides: Pair these ribs with classic sides like coleslaw, cornbread, baked beans, or mashed potatoes.
  • Salads: A fresh green salad or potato salad provides a refreshing contrast to the rich ribs.
  • Beverages: Serve with iced tea, lemonade, or a cold beer to complete the meal.

Tips for Success

  1. Choose the Right Ribs: Beef back ribs and short ribs both work well, but short ribs tend to be meatier and more tender.
  2. Don’t Skip the Rub: The spice rub is essential for building flavor, even if you’re using a flavorful barbecue sauce.
  3. Low and Slow: Cooking on low heat for a longer time yields the most tender and flavorful results.
  4. Layer the Sauce: Adding more barbecue sauce during broiling enhances the sticky, caramelized texture.
  5. Keep the Lid Closed: Avoid lifting the lid during cooking, as it releases heat and can prolong cooking time.
