Instructions
Step 1: Prepare the Ribs
- Rinse the beef ribs under cold water and pat them dry with paper towels.
- Remove the silver skin (a thin, tough membrane) from the back of the ribs if it hasn’t already been removed. This step helps the seasoning penetrate the meat.
- In a small bowl, mix the salt, black pepper, smoked paprika, garlic powder, and onion powder.
- Rub the spice mixture all over the ribs, ensuring they are evenly coated.
Step 2: Optional Searing (Adds Extra Flavor)
- Heat the olive oil in a large skillet over medium-high heat.
- Sear the ribs for 2-3 minutes on each side until browned. This step enhances the flavor but can be skipped if you’re short on time.
Step 3: Prepare the Barbecue Sauce Mixture
- In a medium bowl, whisk together the barbecue sauce, apple cider vinegar, beef broth, brown sugar, Worcestershire sauce, Dijon mustard, and liquid smoke (if using).
Step 4: Slow Cook the Ribs
- Place the ribs in the slow cooker, arranging them in a single layer if possible.
- Pour the barbecue sauce mixture over the ribs, ensuring they are fully coated.
- Cover the slow cooker with the lid and set it to low for 6-8 hours or high for 4-5 hours. The ribs are done when the meat is tender and easily pulls away from the bone.
Step 5: Optional Broiling (For a Sticky Glaze)
- Preheat your oven to broil and line a baking sheet with aluminum foil.
- Carefully transfer the cooked ribs to the prepared baking sheet using tongs.
- Brush additional barbecue sauce over the ribs.
- Broil the ribs for 3-5 minutes, or until the sauce becomes caramelized and sticky. Watch closely to prevent burning.
Step 6: Serve and Enjoy
- Transfer the ribs to a serving platter and drizzle with any remaining sauce from the slow cooker.
- Serve hot with your favorite sides.
Serving Suggestions
- Sides: Pair these ribs with classic sides like coleslaw, cornbread, baked beans, or mashed potatoes.
- Salads: A fresh green salad or potato salad provides a refreshing contrast to the rich ribs.
- Beverages: Serve with iced tea, lemonade, or a cold beer to complete the meal.
Tips for Success
- Choose the Right Ribs: Beef back ribs and short ribs both work well, but short ribs tend to be meatier and more tender.
- Don’t Skip the Rub: The spice rub is essential for building flavor, even if you’re using a flavorful barbecue sauce.
- Low and Slow: Cooking on low heat for a longer time yields the most tender and flavorful results.
- Layer the Sauce: Adding more barbecue sauce during broiling enhances the sticky, caramelized texture.
- Keep the Lid Closed: Avoid lifting the lid during cooking, as it releases heat and can prolong cooking time.
