Instructions
Step 1: Preheat the Oven
- Preheat your oven to 375°F (190°C).
- Lightly grease the baking dish with cooking spray or oil.
Step 2: Prepare the Meat Filling
- Heat a large skillet over medium heat. Add the ground beef, onion, and bell pepper. Cook until the beef is browned and the vegetables are softened, about 5-7 minutes. Drain any excess grease.
- Stir in the taco seasoning mix and water. Cook for 2-3 minutes, allowing the flavors to meld and the liquid to reduce.
- Add the diced tomatoes, corn, and black beans (if using). Stir well and cook for another 2-3 minutes. Remove from heat.
Step 3: Assemble the Casserole
- Spread the prepared meat filling evenly in the greased baking dish.
- Sprinkle 1 cup of shredded cheese over the meat mixture.
Step 4: Prepare the Cornbread Batter
- In a mixing bowl, combine the cornbread mix, milk, and egg. Stir until just combined. If desired, fold in 1/2 cup shredded cheddar cheese for an extra cheesy topping.
- Spread the cornbread batter evenly over the meat and cheese layer in the baking dish.
Step 5: Bake
- Place the casserole in the preheated oven and bake for 20-25 minutes, or until the cornbread topping is golden brown and a toothpick inserted into the center comes out clean.
- Remove from the oven and let the casserole rest for 5-10 minutes to set.
Step 6: Serve
- Garnish the casserole with chopped cilantro if desired.
- Serve warm with sour cream, salsa, or guacamole on the side.
Serving Suggestions
- Pair with a side salad or steamed vegetables for a balanced meal.
- Serve with tortilla chips for scooping up the casserole.
- Offer a variety of toppings like diced avocado, jalapeños, or hot sauce for customization.
Tips for Success
- Customizable Proteins: Substitute ground beef with ground chicken, turkey, or even plant-based alternatives for a vegetarian option.
- Even Cornbread Layer: Spread the cornbread batter carefully to ensure it bakes evenly over the meat mixture.
- Add Heat: For a spicier casserole, include diced jalapeños or a splash of hot sauce in the meat filling.
- Prevent Dryness: If the cornbread topping begins to brown too quickly, cover the dish with aluminum foil during the last few minutes of baking.
