Step 1: Preheat Your Oven

Preheat your oven to 350°F (175°C) . Line an 8×8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.

Step 2: Make the Crust

  1. In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter until the mixture resembles wet sand.
  2. Press the mixture firmly into the bottom of the prepared pan to form an even layer. Use the back of a spoon or your hands to smooth it out.
  3. Bake the crust for 8–10 minutes , or until lightly golden. Remove from the oven and let it cool slightly while you prepare the filling.

Step 3: Prepare the Filling

  1. In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy, about 2–3 minutes.
  2. Add the eggs one at a time, beating well after each addition. Mix in the lemon zest, lemon juice, and vanilla extract until fully combined.

Step 4: Assemble and Bake

  1. Pour the cream cheese filling over the cooled crust, spreading it evenly with a spatula.
  2. Bake in the preheated oven for 25–30 minutes , or until the edges are set and the center is slightly jiggly but not liquidy.
  3. Let the bars cool completely in the pan on a wire rack.

Step 5: Chill and Serve

  1. Once cooled, refrigerate the bars for at least 2–3 hours , or until fully set.
  2. Use the parchment paper overhang to lift the bars out of the pan. Cut into squares and garnish with a dusting of powdered sugar or fresh berries, if desired.
