Step 1: Preheat Your Oven
Preheat your oven to 350°F (175°C) . Line an 8×8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
Step 2: Make the Crust
- In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of the prepared pan to form an even layer. Use the back of a spoon or your hands to smooth it out.
- Bake the crust for 8–10 minutes , or until lightly golden. Remove from the oven and let it cool slightly while you prepare the filling.
Step 3: Prepare the Filling
- In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy, about 2–3 minutes.
- Add the eggs one at a time, beating well after each addition. Mix in the lemon zest, lemon juice, and vanilla extract until fully combined.
Step 4: Assemble and Bake
- Pour the cream cheese filling over the cooled crust, spreading it evenly with a spatula.
- Bake in the preheated oven for 25–30 minutes , or until the edges are set and the center is slightly jiggly but not liquidy.
- Let the bars cool completely in the pan on a wire rack.
Step 5: Chill and Serve
- Once cooled, refrigerate the bars for at least 2–3 hours , or until fully set.
- Use the parchment paper overhang to lift the bars out of the pan. Cut into squares and garnish with a dusting of powdered sugar or fresh berries, if desired.
