Ingredients:

  • 2 cups grated zucchini
  • 1 large carrot, grated
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 1 large egg, beaten
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • Salt and pepper, to taste
  • Olive oil, for frying

Instructions:

  1. Prepare the Vegetables: Start by placing the grated zucchini into a clean kitchen towel. Squeeze out as much moisture as possible; this step is crucial for achieving fritters that are crispy rather than soggy.
  1. Combine the Ingredients: In a large mixing bowl, combine the squeezed zucchini, grated carrot, chopped onion, minced garlic, grated Parmesan cheese, all-purpose flour, beaten egg, chopped parsley, and dill. Season the mixture with salt and pepper to taste, then stir until all ingredients are well incorporated.
