FRIED RIBS

Instructions

Step 1: Prepare the Ribs

  1. Rinse the ribs under cold water and pat dry with paper towels.
  2. Remove the membrane from the back of the ribs (if not already removed). Use a knife to lift a corner of the membrane, then pull it off using a paper towel for grip.
  3. Cut the ribs into individual pieces or sections with 2-3 ribs each, depending on preference.
  4. Season the ribs with salt, black pepper, garlic powder, onion powder, and smoked paprika. Let them rest for 20-30 minutes at room temperature to allow the flavors to penetrate.

Step 2: Parboil the Ribs (Optional but Recommended)

  1. In a large pot, bring water to a boil and add the seasoned ribs.
  2. Reduce the heat to a simmer and cook the ribs for 20-25 minutes until they are tender but not falling apart.
  3. Remove the ribs from the water and let them cool on a baking sheet lined with paper towels.

Step 3: Prepare the Batter

  1. In a large bowl, whisk together the flour, cornstarch, baking powder, cayenne pepper (if using), salt, and black pepper.
  2. In a separate bowl, whisk together the buttermilk and eggs until well combined.
  3. Set up a dredging station: one bowl with the flour mixture and another with the buttermilk mixture.

Step 4: Heat the Oil

  1. In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to maintain a consistent temperature for even frying.
  2. Prepare a wire rack over a baking sheet to drain the fried ribs after cooking.

Step 5: Coat and Fry the Ribs

  1. Dip each rib into the flour mixture, ensuring it’s evenly coated. Shake off any excess.
  2. Next, dip the rib into the buttermilk mixture, letting any excess drip off.
  3. Return the rib to the flour mixture for a second coating, pressing gently to adhere.
  4. Carefully lower the ribs into the hot oil, a few at a time, to avoid overcrowding.
  5. Fry the ribs for 4-6 minutes, turning occasionally, until golden brown and crispy.
  6. Remove the ribs with tongs and place them on the prepared wire rack to drain excess oil.

Step 6: Serve

  1. Arrange the fried ribs on a platter and garnish with fresh herbs if desired.
  2. Serve hot with your favorite dipping sauces and sides like coleslaw, fries, or cornbread.

  • Sides: Pair fried ribs with mashed potatoes, cornbread, or a crisp salad for a complete meal.
  • Dips: Offer barbecue sauce, honey mustard, or a spicy aioli for dipping.
  • Toppings: Add a drizzle of hot honey or a sprinkle of Parmesan cheese for a unique twist.
