Instructions
Step 1: Prepare the Ribs
- Rinse the ribs under cold water and pat dry with paper towels.
- Remove the membrane from the back of the ribs (if not already removed). Use a knife to lift a corner of the membrane, then pull it off using a paper towel for grip.
- Cut the ribs into individual pieces or sections with 2-3 ribs each, depending on preference.
- Season the ribs with salt, black pepper, garlic powder, onion powder, and smoked paprika. Let them rest for 20-30 minutes at room temperature to allow the flavors to penetrate.
Step 2: Parboil the Ribs (Optional but Recommended)
- In a large pot, bring water to a boil and add the seasoned ribs.
- Reduce the heat to a simmer and cook the ribs for 20-25 minutes until they are tender but not falling apart.
- Remove the ribs from the water and let them cool on a baking sheet lined with paper towels.
Step 3: Prepare the Batter
- In a large bowl, whisk together the flour, cornstarch, baking powder, cayenne pepper (if using), salt, and black pepper.
- In a separate bowl, whisk together the buttermilk and eggs until well combined.
- Set up a dredging station: one bowl with the flour mixture and another with the buttermilk mixture.
Step 4: Heat the Oil
- In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to maintain a consistent temperature for even frying.
- Prepare a wire rack over a baking sheet to drain the fried ribs after cooking.
Step 5: Coat and Fry the Ribs
- Dip each rib into the flour mixture, ensuring it’s evenly coated. Shake off any excess.
- Next, dip the rib into the buttermilk mixture, letting any excess drip off.
- Return the rib to the flour mixture for a second coating, pressing gently to adhere.
- Carefully lower the ribs into the hot oil, a few at a time, to avoid overcrowding.
- Fry the ribs for 4-6 minutes, turning occasionally, until golden brown and crispy.
- Remove the ribs with tongs and place them on the prepared wire rack to drain excess oil.
Step 6: Serve
- Arrange the fried ribs on a platter and garnish with fresh herbs if desired.
- Serve hot with your favorite dipping sauces and sides like coleslaw, fries, or cornbread.

- Sides: Pair fried ribs with mashed potatoes, cornbread, or a crisp salad for a complete meal.
- Dips: Offer barbecue sauce, honey mustard, or a spicy aioli for dipping.
