One Pot Lasagna Soup

One Pot Lasagna Soup is a deliciously hearty and comforting dish that combines all the flavors of traditional lasagna in a fraction of the time. Ingredients

For the Soup:

  • 1 tablespoon olive oil
  • 1 pound (450g) ground beef or Italian sausage
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups (1 liter) chicken or beef broth
  • 2 cups (480ml) marinara sauce
  • 1 can (14.5 oz/400g) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 cup (240ml) water (as needed for consistency)
  • 8 lasagna noodles, broken into bite-sized pieces

For the Cheese Mixture:

  • 1 cup (250g) ricotta cheese
  • 1/2 cup (50g) grated Parmesan cheese
  • 1 cup (100g) shredded mozzarella cheese
  • 1 tablespoon fresh parsley, chopped (optional)

Optional Garnishes:

  • Fresh basil leaves
  • Grated Parmesan cheese
  • Crusty bread or garlic bread
