Instructions

Step 1: Cook the Meat

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the ground beef or Italian sausage and cook, breaking it apart with a wooden spoon, until browned and fully cooked (about 5-7 minutes).
  3. Drain any excess grease if necessary and add the chopped onion. Cook for 3-5 minutes until the onion is softened.
  4. Stir in the minced garlic, oregano, basil, red pepper flakes, salt, and black pepper. Cook for 1 minute until fragrant.

Step 2: Build the Soup Base

  1. Pour in the chicken or beef broth, marinara sauce, diced tomatoes, and tomato paste. Stir to combine.
  2. Bring the mixture to a simmer and cook for 10 minutes to let the flavors meld together.

Step 3: Add the Pasta

  1. Stir in the broken lasagna noodles.
  2. Reduce the heat to medium-low and cook for 10-12 minutes, stirring occasionally, until the pasta is tender. Add water as needed if the soup becomes too thick.

Step 4: Prepare the Cheese Mixture

  1. In a small bowl, combine ricotta cheese, Parmesan cheese, mozzarella cheese, and parsley (if using).
  2. Mix until smooth and creamy. Set aside.

Step 5: Serve the Soup

  1. Ladle the lasagna soup into bowls.
  2. Top each bowl with a dollop of the cheese mixture and a sprinkle of fresh basil leaves or grated Parmesan cheese.
  3. Serve with crusty bread or garlic bread for dipping.

Serving Suggestions

  • With Bread: Pair the soup with crusty sourdough bread, garlic bread, or breadsticks for a complete meal.
  • Salad Pairing: A side salad with balsamic vinaigrette complements the rich flavors of the soup.
  • Toppings: Offer extra grated Parmesan, crushed red pepper flakes, or fresh herbs for customization.

Tips for Success

  1. Don’t Overcook the Pasta: Add the noodles toward the end of cooking to ensure they stay tender but not mushy.
  2. Customize the Meat: Use ground turkey, chicken, or a plant-based substitute for a lighter or vegetarian option.
  3. Balance the Consistency: Add water or broth as needed to adjust the soup’s thickness to your liking.
  4. Cheese Perfection: Let the cheese mixture sit at room temperature while you prepare the soup for easier spooning.

Variations

1. Vegetarian Lasagna Soup

  • Omit the meat and use vegetable broth instead of chicken or beef broth.
  • Add diced zucchini, mushrooms, and spinach for extra vegetables.

2. Spicy Lasagna Soup

  • Use hot Italian sausage or add extra red pepper flakes.
  • Drizzle with hot sauce for an extra kick.

3. Creamy Lasagna Soup

  • Stir in 1/2 cup (120ml) heavy cream or half-and-half at the end of cooking for a richer texture.

4. Gluten-Free Option

  • Use gluten-free lasagna noodles or substitute with gluten-free penne or rotini.
