Instructions
Step 1: Preheat and Prepare
- Preheat your oven to 375°F (190°C).
- Grease a 9×5-inch loaf pan with cooking spray or line it with parchment paper for easy removal.
Step 2: Sauté the Vegetables
- Heat a medium skillet over medium heat and add a drizzle of olive oil.
- Add the chopped onion, green bell pepper, and red bell pepper. Cook for 5-7 minutes until softened and fragrant.
- Stir in the minced garlic and cook for an additional 1-2 minutes. Remove from heat and let cool slightly.
Step 3: Make the Meatloaf Mixture
- In a large mixing bowl, combine the breadcrumbs and milk. Let the mixture sit for 2-3 minutes to allow the breadcrumbs to soak up the milk.
- Add the ground beef, eggs, Worcestershire sauce, oregano, smoked paprika, salt, and black pepper. Mix gently with your hands or a wooden spoon until just combined.
- Fold in the sautéed vegetables and shredded provolone cheese. Be careful not to overmix, as this can make the meatloaf dense.
Step 4: Prepare the Cheese Filling
- In a small bowl, mix the shredded provolone or American cheese with the softened cream cheese until well combined.
Step 5: Assemble the Meatloaf
- Take half of the meatloaf mixture and press it evenly into the prepared loaf pan.
- Create a shallow groove in the center of the meat, leaving a border around the edges.
- Spread the cheese filling evenly into the groove.
- Top with the remaining meatloaf mixture, pressing gently to seal the edges and encase the cheese filling.
Step 6: Add the Topping
- In a small bowl, mix the ketchup, Dijon mustard, and brown sugar.
- Spread this mixture evenly over the top of the meatloaf.
Step 7: Bake the Meatloaf
- Cover the loaf pan with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and continue baking for another 25-30 minutes, or until the internal temperature reaches 160°F (71°C).
- Let the meatloaf rest for 10 minutes before slicing to allow the juices to redistribute.
