Instructions

Step 1: Preheat and Prepare

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9×5-inch loaf pan with cooking spray or line it with parchment paper for easy removal.

Step 2: Sauté the Vegetables

  1. Heat a medium skillet over medium heat and add a drizzle of olive oil.
  2. Add the chopped onion, green bell pepper, and red bell pepper. Cook for 5-7 minutes until softened and fragrant.
  3. Stir in the minced garlic and cook for an additional 1-2 minutes. Remove from heat and let cool slightly.

Step 3: Make the Meatloaf Mixture

  1. In a large mixing bowl, combine the breadcrumbs and milk. Let the mixture sit for 2-3 minutes to allow the breadcrumbs to soak up the milk.
  2. Add the ground beef, eggs, Worcestershire sauce, oregano, smoked paprika, salt, and black pepper. Mix gently with your hands or a wooden spoon until just combined.
  3. Fold in the sautéed vegetables and shredded provolone cheese. Be careful not to overmix, as this can make the meatloaf dense.

Step 4: Prepare the Cheese Filling

  1. In a small bowl, mix the shredded provolone or American cheese with the softened cream cheese until well combined.

Step 5: Assemble the Meatloaf

  1. Take half of the meatloaf mixture and press it evenly into the prepared loaf pan.
  2. Create a shallow groove in the center of the meat, leaving a border around the edges.
  3. Spread the cheese filling evenly into the groove.
  4. Top with the remaining meatloaf mixture, pressing gently to seal the edges and encase the cheese filling.

Step 6: Add the Topping

  1. In a small bowl, mix the ketchup, Dijon mustard, and brown sugar.
  2. Spread this mixture evenly over the top of the meatloaf.

Step 7: Bake the Meatloaf

  1. Cover the loaf pan with aluminum foil and bake in the preheated oven for 30 minutes.
  2. Remove the foil and continue baking for another 25-30 minutes, or until the internal temperature reaches 160°F (71°C).
  3. Let the meatloaf rest for 10 minutes before slicing to allow the juices to redistribute.
