For the Cornbread Topping:
- 1 box (8.5 oz) cornbread mix (e.g., Jiffy or similar)
- 1/3 cup (80ml) milk
- 1 large egg
- 1/2 cup (100g) shredded cheddar cheese (optional)
Additional Ingredients:
- 1 cup (100g) shredded Mexican blend cheese or cheddar cheese
- 2 tablespoons chopped fresh cilantro (optional, for garnish)
- Sour cream, salsa, or guacamole (for serving)
