  • 1/2 cup (120ml) water
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 1 cup (150g) frozen or canned corn kernels, drained
  • 1/2 cup (120g) black beans, rinsed and drained (optional)

For the Cornbread Topping:

  • 1 box (8.5 oz) cornbread mix (e.g., Jiffy or similar)
  • 1/3 cup (80ml) milk
  • 1 large egg
  • 1/2 cup (100g) shredded cheddar cheese (optional)

Additional Ingredients:

  • 1 cup (100g) shredded Mexican blend cheese or cheddar cheese
  • 2 tablespoons chopped fresh cilantro (optional, for garnish)
  • Sour cream, salsa, or guacamole (for serving)
